Roasted Pumpkin Hommus

Excellent source of vegetables

Ingredients:

     

- 500g pumpkin, cubed.

- 2 teas ground cumin.

- 1 tblsp tahini

- 1 tblsp lemon juice

- 400g can chickpeas, drained & rinsed.

Method:

 

1. Pre- heat oven to 180 degrees C

2. Place pumpkin on baking tray, drizzle with olive oil & sprinkle with cumin, toss to coat. Bake for ~30 minutes or until soft.

 

3. Add all ingredients to blender/food processor & blend until smooth.
