Corn and Capsicum Loaf

Good source of fibre

Great source of vegetables

Ingredients:

- 2 cups wholemeal SR flour

- 1 cup regular SR flour

- 1 red capsicum, diced

- 1 small onion, diced

- 1 zucchini, grated

- 2 eggs, lightly whisked

- 1 can creamed corn

- 1/3 cup oil i.e. extra virgin olive oil, rice bran oil, canola ets

Method:

1. Pre- heat oven to 180 degrees & line a loaf tine with baking paper.

2. In a large bowl, combine all ingredients and stir until combined. Pour into loaf tin and bake for ~1hr or until skewer inserted into centre comes out clean.

 

Perfect as a snack or a side to a family main!
