Quiche Cups

Great source of vegetables
Freezer friendly
Makes 12
Ingredients:
- 5x eggs
- 1/2 cup milk
- 1/2 cup SR flour
- 2x zucchinis, grated
- 1/4 cup sundried tomatoes, finely diced
- 1 capsicum, finely diced
- 1 cup cheese, grated
Method:
1. Pre- heat oven to 180 degrees C & grease muffin tray.
2. In a large bowl, whisk together eggs, milk, pepper & flour until free from lumps.
3. Add remaining ingredients and then spoon mixture, evenly amongst muffin cups. Bake for ~15 minutes or until set & golden.
Great served with a side of salad!
